Lime & Lemongrass Beef Stir Fry


Lemongrass is one of those flavours that works with any protein and it adds a delicious flavour hit to this quick stir fry.

Tip: We've used long red chillies with a mild flavour but if you like some heat swap it out with birdseye chilli.

Ingredients

2 teaspoons of cold pressed coconut oil
2 teaspoons of sesame oil
100 grams of sliced lean beef
1/2 small onion (48g) sliced
1/4 red or yellow capsicum (30g) sliced
1/2 long red chilli, sliced
1 stalk of lemongrass, white inner part, finely diced (approx. 2.5g)
1 clove of garlic, crushed
1 kaffir lime leaf, bruised
1 bok choy, separated & sliced lengthways
1 tablespoon of coconut aminos or wheat free tamari
2 teaspoons of fish sauce
1/4 teaspoon of coconut sugar
1/4 long red chilli, sliced to garnish
fresh coriander and a lime wedge to garnish

Method

  1. Heat 1 teaspoon of each of the oils in a pan to high heat and fry the meat until just browned, remove and set aside.
  2. Lower the heat to medium low and heat the remaining oils in the pan. Add onion and cook for 2 minutes, add capsicum, chilli and lemongrass and cook, stirring for 1 minute, add the garlic and kaffir lime leaf and cook for another minute continuing to bruise the lime leaf. 
  3. Add the bok choy and cook for 1 minute then return the beef to the pan along with the coconut aminos, fish sauce and sugar. Stir-fry for 2 more minutes.
  4. Serve topped with extra chilli, fresh coriander and the lime wedge.

Note: If using fresh lemongrass only use the tender white part inside, the harder outer part can be left whole and cooked in with the stir-fry for extra flavour then removed before serving. Alternatively you could use the already prepared lemongrass available from the supermarket
