Honey Teriyaki Beef Stir Fry

Ingredients

1 teaspoon of sesame oil
1 teaspoon of cold pressed coconut oil
100 grams of lean beef strips
1/2 bunch broccolini
1 small zucchini
1 bok choy, white & green parts separated
1 long green shallot/scallion, sliced lengthwise
1 teaspoon of grated fresh ginger
1 garlic clove, crushed
2 teaspoons of pure honey
3 teaspoons of coconut teriyaki sauce
1 teaspoon of sesame seeds

Method

  1. Prepare vegetables and set aside
  2. Heat a large fry pan or wok to high heat and add the sesame & coconut oils.
  3. Add the beef strips to the pan and fry off quickly then remove and set aside.
  4. Add the zucchini, broccolini and white part of the bok choy to the pan and stir fry for 1 minute then add the rest of the greens with the garlic and ginger. 
  5. Stirfry for 1 more minute then add the honey, sauce and sesame seeds, stir to coat then add beef back to the pan and warm through.
  6. Serve alone or with a little cooked rice or cauliflower rice.
