Curried Yoghurt Chicken with Apple Slaw


This chicken develops more and more flavour the longer you let it marinate. In a hurry? Cook it right away, it's still amazing!

The Apple Slaw is the perfect companion to this chicken, balancing the flavours out beautifully.

Tip: If you slice the chicken first it will cut down on the cooking time.

Ingredients

Ingredients

1 tablespoon of unsweetened coconut yoghurt
1/2 teaspoon of your favourite curry powder (adjust to your taste)
1 pinch of sea salt
zest of 1/4 lemon
125 grams of chicken breast

Dressing

2 teaspoons of whole egg mayonnaise*
2 teaspoons of unsweetened coconut yoghurt
1 teaspoon of fresh lemon juice
1/2 teaspoon of apple cider vinegar
1/2 teaspoon of Dijon mustard

Slaw Ingredients

1/2 small green apple, grated
1/2 small carrot, grated
1/2 cup of finely sliced wombok cabbage
1 long green shallot/scallion, sliced

Method

  1. Mix coconut yoghurt, curry powder, salt and zest. Add chicken and coat well. You can cook immediately or let marinate until you're ready for it.
  2. Meanwhile whisk all dressing ingredients in a small bowl and set aside. 
  3. Toss all slaw ingredients together in a small bowl and pour the dressing over, toss to coat. Keep in the refrigerator until you're ready for it, the flavours will develop more the longer you leave it.
  4. Cook marinated chicken with all of the marinade in a well greased non-stick pan or on a bbq over medium high heat for 10 -15 mins or until cooked through, it will depend on the thickness of the chicken..
  5. Place the prepared slaw on your serving plate and top with cooked chicken. Season to taste.
*We love to make our own mayonnaise but if you are using store bought choose organic whole egg with no added sugar. The macros are worked on our recipe and you can find it in the Dressings and Sauces section
