Grapefruit Marinated Chicken Salad


A creamy and zesty chicken salad that just works. Yum!

Hint: Our grapefruit weighed 300g whole. While preparing and dicing the grapefruit we ended up with enough juice on the board for the marinade and dressing, just use a board with a catchment edge or a plate so you can collect it. Any leftover flesh is great in a fruit salad.

Tip: Don't marinate the chicken too long as the juice will begin the cooking process, 15 minutes is plenty.

Ingredients

Dressing Ingredients

1 tablespoon of unsweetened coconut yoghurt
1 teaspoon of whole egg mayonnaise*
1/2 teaspoon of grapefruit juice
1/8 teaspoon of Dijon mustard
1 pinch of fresh cracked black pepper

Ingredients

100 grams of free range chicken thigh
1 teaspoon of extra virgin olive oil
2 teaspoons of fresh grapefruit juice
1/2 teaspoon of pure honey
1 clove of garlic, crushed
1 pinch each of sea salt and cracked black pepper

Salad

2 cups of rocket leaves (40g)
100 grams of grapefruit flesh, diced
6 solonata or 3 cherry tomatoes
1/4 small cucumber, diced (25g)
1/4 avocado (40g) diced

Method

  1. Place the chicken in a bowl or snap-lock bag and add the remaining ingredients. Let marinate for 15 minutes.
  2. Meanwhile prepare the salad ingredients and place in a serving bowl then whisk all of the dressing ingredients in a small jar or bowl and set aside.
  3. Heat a small pan to medium high, remove the chicken from the marinade and cook for 3-4 minutes each side or until cooked through. Remove to a chopping board and set aside to rest.
  4. When chicken has cooled a little, mix the dressing into the salad and serve chicken over the top.
*We love to make our own mayonnaise but if you are using store bought choose organic whole egg with no added sugar. The macros are worked on our recipe and you can find it in the Dressings and Sauces section
