1 tablespoon of unsweetened coconut yoghurt
1 teaspoon of whole egg mayonnaise*
1/2 teaspoon of grapefruit juice
1/8 teaspoon of Dijon mustard
1 pinch of fresh cracked black pepper
Ingredients
100 grams of free range chicken thigh
1 teaspoon of extra virgin olive oil
2 teaspoons of fresh grapefruit juice
1/2 teaspoon of pure honey
1 clove of garlic, crushed
1 pinch each of sea salt and cracked black pepper
Salad
2 cups of rocket leaves (40g)
100 grams of grapefruit flesh, diced
6 solonata or 3 cherry tomatoes
1/4 small cucumber, diced (25g)
1/4 avocado (40g) diced
