Chilli Salmon with Pineapple Salsa


There are some out there that might think this is a very unusual flavour combination but trust me, it works! Summer on a plate.

1 piece of salmon, skin off (100g)
1/2 teaspoon of lime zest
1 large pinch of smoked paprika
1 pinch of chilli powder
1/4 teaspoon of garlic powder
1 pinch of sea salt

Pineapple Salsa

1 x 1.5 cm thick slice of fresh pineapple, diced
1/4 small red capsicum (30g) diced
1/8 small red onion, diced (24g)
1/4 fresh jalapeno chilli, diced
1 tablespoon of chopped fresh coriander
1 tablespoon of fresh lime juice
1 pinch of sea salt

Method

  1. Combine all salsa ingredients and set aside.
  2. In a small bowl, combine fresh lime zest, smoked paprika and garlic powder. Stir to combine then sprinkle over the salmon, massaging in lightly.
  3. Heat the coconut oil in a pan to medium high. Add salmon and cook 4 minutes each side or until done to your liking.
  4. Place half the salsa on a plate, top with the cooked salmon then place remaining salsa on top.
