Steak & Fries with Chimichurri

Chimichurri is a delicious South American sauce that goes with most proteins. Its flavour is punchy and robust and adds some green goodness to your dishes.

Ingredients

300 grams of lean grass-fed or organic beef fillet
1 teaspoon of extra virgin olive oil
2 medium potatoes (approx. 400g)
1 extra tsp of extra virgin olive oil
1/4 teaspoon of sea salt
200 grams of tomatoes on the vine or grape tomatoes

Chimichurri:

1 small French shallot, chopped
1/2 to 1 red bird's eye chilli (start with 1/2 and add extra for more heat)
2 cloves of garlic, chopped
15 millilitres of apple cider vinegar
15 millilitres of extra virgin olive oil
1/2 teaspoon of sea salt
1 cup of flat leaf parsley
1 cup of fresh coriander leaves

Method

  1. Heat your oven to 180°C/355°F and line a baking tray with baking paper (optional).
  2. Peel and cut your potatoes into chips.  I usually halve the potato lengthways, then quarter lengthways, then into 2 or 3 chips depending on potato size. 
  3. Dry the potatoes with some paper towel and place onto baking tray.  Rub in the 1 teaspoon of oil & ¼ teaspoon of salt.   Spread them out well and put them into the oven.  They will take around 40-50mins to cook and brown well.
  4. Make the Chimichurri by placing all ingredients into a small blender and pulse blitzing it until all the ingredients have come together into a thick sauce.  This should only take around 20 – 30 seconds.
  5. The tomatoes need to go into the oven & will only take 10mins to cook.  Make some space on the chips tray and add them once the chips have been in the oven for around 30mins. Optional - use tongs to rub the tomatoes through the oil and salt that have been cooking the chips.
  6. Once the tomatoes are in the oven.  Heat a pan to medium heat ready to cook the beef.  Add 1 teaspoon of oil to the pan and once heated add the beef.  Cooking time will depend on how thick the beef cut is, plus how you like your beef done.  I would normally cook this for around 5 mins on each side.
  7. Once the beef cooked & resting, take the chips and tomatoes out of the oven to cool slightly before serving.  Serve everything on a plate with a good dollop of chimichurri on the beef.
