Beef & Bean Nachos

The freshest most delicious nachos and, you will boost your veggie intake without even realising it!

We've replaced the corn chips with roasted potato slices. Topped them with a beef & bean sauce that's full of veggies. With the special addition of avocado, coconut yoghurt, coriander leaves & a squeeze of lime - yum!

TIP: Baked sweet potato rounds are also delicious.

Ingredients

Potato Nachos:

400 grams of potatoes, peeled & sliced into discs
1 teaspoon of cold pressed coconut oil or extra virgin olive oil
Pinch of sea salt

Beef & Beans:

200 grams of lean beef mince
1 teaspoon of extra virgin olive oil
1 small brown/yellow onion finely diced
3 cloves of garlic, grated or minced
2 teaspoons of ground cumin
1/2 teaspoon of ground chilli powder
1/2 teaspoon of sea salt
150 grams of fresh tomato, diced small
150 grams of zucchini, grated
1/4 cup of passata
1/2 cup of canned black beans, rinsed & drained

Toppings:

1/2 avocado, sliced
2 tablespoons of natural coconut yoghurt (optional)
Coriander leaves (optional)
Squeeze of fresh lime (optional)

Method

  1. Heat the oven to 180°C/355°F and line a baking tray with baking paper (optional).
  2. Coat the sliced potato in 1 tsp oil & a pinch of sea salt and lay them out with no overlapping onto the baking tray.  Place into the oven for around 40mins or until golden brown.
  3. Heat a medium saucepan to medium/low heat & add 1 teaspoon of oil.  Once heated add the diced onion & cook for around 4mins until soft. 
  4. Add the beef, garlic, cumin, chilli powder & salt and cook until the meat is almost cooked. Then add the tomatoes & zucchini and cook for another minute. 
  5. Add the passata & black beans and cook until heated through and turn off the heat.  This quick-cook method works really well.  It’s optional to cook for another 30mins with the lid on if timing allows which will soften the beef and infuse flavours.
  6. When the potatoes are done, serve onto a plate, top with beef, avocado & any other topping choices.
