Herb and Goat's Cheese Scramble


A light and creamy scramble, perfect for a quick and easy meal any time of the day. You can use whatever herbs you have on hand, we used sage, parsley and thyme.
Goat's cheese has less lactose, lower sodium, smaller and easier to digest fats, and similar if not higher vitamin and mineral levels as cows cheese.
Hint: The pine nuts are optional but delicious! They are included in the macros.

Ingredients

2 free range eggs
2 teaspoons of unsweetened coconut yoghurt
2 teaspoons of finely chopped fresh herbs of choice
1 tablespoon of crumbled goat's feta (25g)
1 teaspoon of toasted pine nuts to serve (optional)

Method

  1. Mix eggs with the yoghurt until just combined and stir in herbs and feta.
  2. Heat a non-stick pan to medium heat, add eggs and once they start to set, use a spatula to gently fold inwards. Continue folding eggs over until almost cooked through, they will continue to cook once removed from the heat.
  3. Season with salt and pepper and pine nuts if using.
