Coconut, Lime & Coriander Dressing


This coconut yoghurt based dressing is thick, rich & gorgeous. It will easily go on your favourite dressings list.

TIP: You can swap to Greek Yoghurt, and swap out coriander for mint or basil.

Ingredients

2 tablespoons of unsweetened coconut yoghurt
Zest of one small lime
1 1/2 teaspoons of fresh lime juice
1/2 - 1 small clove of garlic, grated
1/4 cup of fresh coriander
Pinch of sea salt

Method

Blending this dressing is best to incorporate the herbs, and you will need a small blender.  If you don't have one, use a mortar & pestle or just chop the herbs as finely as possible.
