Hot Smoked Salmon Salad with Quinoa


This is a really easy salad to put together, with a delish dressing that definitely makes this salad sing!

Note: Quinoa is restricted on some Paleo eating plans, it will just depend on what protocol you are following.

Ingredients

Ingredients

1/4 cup of quinoa
80 grams of hot smoked salmon
1 small cucumber, sliced into thin batons
1 carrot, julienne
1 long green shallot / scallion, sliced into long strips
1/4 avocado
1 large handful of salad greens, washed & dried well
1 teaspoon of black sesame seeds or nigella seeds

Dressing

2 teaspoons of lime juice
1 teaspoon of wheat free tamari
1 teaspoon of fish sauce
1/2 teaspoon of sesame oil
1/4 teaspoon of coconut sugar

Method

  1. Cook the quinoa & let it rest with the lid on as per the instructions.  Once rested, let it cool a little before adding it to your salad. 
  2. In the meantime, mix all of the dressing ingredients in a small bowl or shake it together in a small jar.
  3. Prepare all salad ingredients & arrange in your serving bowl.  Add the warm quinoa and place the salmon on top.
  4. Spoon over the dressing and top with the black sesame seeds.
