One Tray Vegetable Bake with Basil & Walnut Gremolata


This delicious vegetable tray bake is pretty easy to prepare. Adding the gremolata just lifts all those flavours and you will feel very satisfied!

TIP: Make the gremolata in the last few minutes of cooking time as these ingredients may only keep their bright colour for a short time once blended.

1 large potato, sliced thinly
1 teaspoon of cold pressed coconut oil
1 small bunch of asparagus
120 grams of cherry tomatoes on the vine (or loose cherry/grape tomatoes)
1/4 avocado, sliced
Large pinch of sea salt

Basil Gremolata

1/4 cup of fresh basil leaves, washed & dried well
1 tablespoon of walnuts
1 tablespoon of grated parmesan cheese
Zest of 1 small lemon
1 small clove of garlic, sliced
Pinch of sea salt

Method

  1. Heat the oven to 180°C/350°F/Gas4.
  2. Line a baking tray with baking paper.  
  3. Place the sliced potato onto the paper and then rub in the oil and salt.  Spread them out evenly and put into the oven. 
  4. Note: you will cook the potato for around 30mins in total, and will add in the tomato & asparagus at different times.
  5. After 15 minutes add the tomatoes & drizzle with a little oil.  Put back into the oven for 10 mins. 
  6. In the last 5 minutes of cooking add the asparagus.  Using your tongs roll the asparagus into any of the oil and juices that are on the tray, then spread them out and put everything back into the oven. 
  7. After 5 minutes check that everything has cooked through & take out of the oven.
  8. Also during this last 5 minutes of cooking, blitz all your gremolata ingredients together in a small blender (see notes below).  If you make this any earlier some of the ingredients may go a little brown in colour.
  9. Place everything on a serving plate with your avocado & top with the gremolata. 

 

*Note if you don’t have a small blender you can use a mortar & pestle or just mince and chop your ingredients finely and mix together for the gremolata.
