Creamy Italian Chicken with Green Beans


This is one of those dishes where you want to lick the plate clean, so many delicious flavours that all just work beautifully together.

Tip: You can use other veggies on the side but we think the garlic and lemon flavours are the perfect flavour combo with this dish.

Hint: You can leave out the white wine and just use extra stock.

Note: We used semi-dried tomatoes but if using sun-dried you can soak them in the stock while cooking the chicken.

Ingredients

Ingredients

1 teaspoon of extra virgin olive oil
1 teaspoon of pure butter or ghee (note: can use all oil)
150 grams of whole free range chicken thigh
1 clove of garlic, crushed
1 tablespoon of semi-dried tomatoes (15g)
1 tablespoon of white wine
1 tablespoon of chicken broth or stock
1/4 cup of unsweetened coconut yoghurt
1/2 cup of baby spinach leaves
1/4 cup of fresh basil leaves

Green Beans

1/2 teaspoon of extra virgin olive oil, butter or ghee
30 grams of green beans (5 or 6)
1 garlic clove, sliced
zest of 1/4 lemon
1/2 teaspoon of fresh lemon juice
Himalayan or sea salt and cracked black pepper to taste

Method

  1. Heat the oil/butter/ghee in a pan to medium. Season the chicken with a little salt and pepper and cook on both sides until just cooked through and nicely browned. Remove and set aside.
  2. Add the garlic and tomatoes to the pan and cook, stirring for 1 to 2 minutes then add the wine if using and the stock. and cook for 1 minute more.
  3. Heat another small pan to medium and add the oil or butter for the beans. Once heated cook the beans for 2-3 minutes then add the garlic and cook 1 minute more. Stir in the zest and juice and reduce heat to low and keep warm until chicken is ready.
  4. while the beans are cooking add the yoghurt to the pan with the tomatoes and stir until well mixed then add the chicken back to the pan.
  5. Stir in the spinach and basil leaves and continue to simmer until spinach is wilted and chicken is heated through.
  6. Serve the chicken and sauce alongside the green beans. Enjoy!
