Egg Roll-ups


Delicious bite-sized omelette rolls with a delicious flavour hit!
Vegetarian or following a PCOS diet? Just leave out the ham or bacon, it's still a seriously delicious dish!

Ingredients

2 free range eggs
1 tablespoon of unsweetened coconut yoghurt
1/2 teaspoon of Dijon mustard
2 chives, chopped
1 lean rasher of cooked bacon or slice of ham, diced (optional)
1/2 cup of loosely packed basil leaves, divided
1 pinch each of sea salt and pepper
2 teaspoons of whole egg mayonnaise*
1/2 cup of baby spinach or rocket
1/4 avocado, sliced

Method

  1. Preheat oven to 200°C and line a small pan with sides with baking paper. A square cake pan works perfectly.
  2. Whisk eggs, yoghurt and mustard together. Add chopped chives, diced bacon or ham if using, ¼ cup of the basil leaves roughly chopped and salt & pepper
  3. Pour into prepared pan and bake for approximately 8-10 mins or until egg is cooked through.
  4. Gently remove the omelette to a plate and spread with mayonnaise, top with spinach or rocket leaves, avocado and remaining basil leaves.
  5. Carefully roll the omelette into a sausage shape then slice into pieces to serve.
*We love to make our own mayonnaise but if you are using store bought choose organic whole egg with no added sugar. You can find our Homemade Mayonnaise recipe in the Dressings section
