Easy Paleo Banana Pancakes


Light, fluffy and so, so easy, just whip everything up in the blender and pour into the pan. The banana adds just the right amount of sweetness so no added sugars are necessary.

Ingredients

1 free range egg
1 1/2 tablespoons of water
1/2 cup of blanched almond meal
1 small banana
1/4 teaspoon of baking soda
1/4 teaspoon of vanilla extract

Method

  1. Place all ingredients into a small blender or food processor and pulse/blend until just combined.
  2. Heat a frypan to medium low and grease with coconut oil or ghee.
  3. Pour half the mixture into the pan and spread out evenly, approximately 12-13cm
  4. Cook for around 4 mins on 1 side then using a wide spatula, carefully turn and cook for a further 2-3 minutes, it will be quite dark in colour.
  5. Repeat with the remaining mixture and serve topped with coconut yoghurt, your favourite fruit and a little maple syrup if desired.

Note: To make it easier to flip them you could make 4 smaller ones instead.
