One Pan Lamb Dinner


One-pan in the oven, it couldn't be easier!

Note: We calculated the macros on the vegetables we used but it's a great way to use up whatever you have in the fridge.

Ingredients

Marinade

1/2 teaspoon of extra virgin olive oil
1 teaspoon of fresh orange juice
zest of 1/4 orange
1/2 teaspoon of red wine vinegar
1 teaspoon of finely chopped fresh rosemary
1 pinch each of sea salt and cracked black pepper

Ingredients

100 grams of diced lamb steak
1 medium potato, diced (60g)
1/4 onion, separated (25g)
50 grams of diced pumpkin
50 grams of diced sweet potato
1/4 small capsicum, diced (30g)
25 grams of green beans, chopped
1/4 small zucchini, sliced (30g)
40 grams of fresh or frozen corn kernels
1 garlic clove, sliced
1/2 teaspoon of extra virgin olive oil

Method

  1. Mix the marinade ingredients in a bowl and add the lamb, set aside.
  2. Preheat your oven to 180°C - 350°F - Gas Mark 4 and line a pan with baking paper.
  3. Add the potatoes, onion, pumkin and sweet potato. Drizzle with 1/2 teaspoon of the oil, season with salt & pepper and toss to coat.
  4. Place in the oven and bake for 10 minutes. Remove the pan from the oven and add the remaining vegetables and the lamb with all of the marinade. Toss to coat.
  5. Bake for a further 8-10 minutes or until lamb is just cooked through. Serve and enjoy.
