Chilli & Garlic Prawn Pasta Salad


A yummy and very simple dish. The garlic prawns are seriously delicious!

Hint: We used Barilla Chickpea Casarecce pasta for this but any of your favourite gluten-free pasta will work.

Ingredients

Dressing

2 teaspoons of extra virgin olive oil
1 teaspoon of fresh lemon juice
zest of 1/4 lemon
1/4 teaspoon of coconut sugar
1 teaspoon of chopped chives

Marinade

1 teaspoon of extra virgin olive oil
1 garlic clove, crushed
1/2 long green chilli, sliced

Ingredients

65 grams of gluten free pasta
125 grams of peeled and deveined green prawns
25 grams of fresh rocket leaves
1 long green shallot/scallion, sliced
3 cherry tomatoes quartered or 6 perino tomatoes halved
1/4 small cucumber, sliced (30g)
1/4 avocado, diced

Method

  1. Place the prawns in a bowl with the marinade ingredients, combine well and set aside.
  2. Cook the pasta according to directions, drain and rinse under cold water. Set aside.
  3. Meanwhile mix all of the dressing ingredients in a bowl or screw top jar. Prepare the rest of the salad ingredients and combine in a serving bowl. Pour over the dressing then fold through the cooled pasta. Season to taste.
  4. Heat a small pan to medium and cook the prawns in the marinade until cooked through.
  5. Top with the cooked prawns and serve immediately.
