Beef Caprese Salad


All the things we love about a Caprese salad with the addition of tender juicy steak and creamy avocado.

125 grams of lean beef steak
1 cup of rocket leaves (20g)
6 cherry tomatoes, halved (85g)
6 baby bocconcini, halved (30g)
1/4 avocado, sliced
1/4 cup of fresh basil leaves
sea salt & cracked pepper to taste

Dressing

1 teaspoon of extra virgin olive oil
1 teaspoon of balsamic vinegar

Method

  1. Heat a bbq or grill pan to medium high. Grease with a little oil and cook the steak until it's done to your liking. Set aside to rest.
  2. Place the rocket on a serving plate and top with the tomatoes, bocconcini, avocado and basil leaves.
  3. Season the steak and slice before placing on top ofthe salad. Whisk the olive oil and vinegar and drizzle over the salad. Serve and enjoy!
