Moroccan Chicken Salad


Light spices, fresh herbs, sweet pomegranate & creamy yoghurt. This salad is delish.

TIP: You can buy packaged brown rice & quinoa together which would be a great option for this dish. Alternatively, you could use all brown rice or all quinoa.

Ingredients

1/2 cup of cooked brown rice
1/4 cup of cooked quinoa
100 grams of chicken breast, thinly sliced
1/2 teaspoon of ground cumin
1/2 teaspoon of ground coriander
1/2 teaspoon of ground cinnamon
Zest of 1 small lemon
Pinch of sea salt
1 teaspoon of cold pressed coconut oil
1 long green shallot/scallion, finely sliced
1 small carrot, grated or julienne
1 cup of baby spinach
1 teaspoon of fresh lemon juice
1/4 cup of fresh mint leaves
1/4 cup of fresh coriander leaves (optional)
1 tablespoon of roasted pistachio nuts
2-3 tablespoons pomegranate seeds
1-2 tablespoons of unsweetened coconut yoghurt or greek yoghurt

Method

  1. Cook your rice and quinoa prior to starting the salad.
  2. Mix the cumin, ground coriander, cinnamon, lemon zest & pinch of sea salt together in bowl.  Separate ½ tsp of the spice mix for the rice.  Add the chicken to the remaining spice mix and coat the pieces.
  3. Heat a small pan to a medium heat (too high heat will burn the spices).  Add the coconut oil and when heated add the chicken pieces.  Watching carefully so that the spices don’t burn. 
  4. Once cooked, remove chicken and set aside.
  5. In the same pan, lower the heat and add a little more oil if needed.  Add the extra ½ tsp of spice mix that was set aside.  Add the cooked rice & quinoa and stir to heat.  Then add the shallot, carrot, spinach, lemon juice and another pinch of sea salt.  Stir together gently until heated through.
  6. Place the rice mixture into a serving bowl.  Top with fresh herbs, chicken, pistachios, pomegranate, & yoghurt.  Enjoy!
