Mexican Beef Mince Bowl


We never tire of those authentic Mexican flavours and this dish has it in spades!

One-pan means minimal clean up too so we think it's going to be one of your favourites too.

Tip: Want it a little spicier? Add some chilli powder in with the other spices.

Hint: Don't leave off the yoghurt, once you add the lemon juice it tastes so much like sour cream!

Ingredients

Toppings

1/4 avocado, diced
1/2 long red chilli, sliced
1 lime wedge to serve
extra coriander leaves to garnish

Dairy Free Sour Cream

2 tablespoons of unsweetened coconut yoghurt
1/2 teaspoon of fresh lemon juice

Ingredients

1/2 teaspoon of extra virgin olive oil
1/4 onion, sliced (40g)
1/4 small red capsicum, diced
1 garlic clove, crushed
1/2 teaspoon of smoked paprika
1/2 teaspoon of dried oregano
1/4 teaspoon of ground cumin
125 grams of lean beef mince
3 teaspoons of pure tomato paste
1/3 cup + 2 Tablespoons of beef bone broth or stock
50 grams of uncooked rice (we used Forbidden brand Green rice)
50 grams of tinned black beans, rinsed and drained
1 teaspoon of chopped fresh coriander

Method

  1. Heat oil in a pan to medium high and cook the onion and capsicum for 2-3 minutes. Add the garlic, paprika, oregano and cumin and cook for 30 seconds more.
  2. Add the mince and cook, stirring for 3-4 minutes or until browned, add in the tomato paste and cook for another 30 seconds.
  3. Add the stock plus 1/2 cup water and bring to a simmer, stir in the rice, reduce heat to medium low and cook uncovered for 8-10 minutes or until liquid is absorbed.
  4. Meanwhile prepare the sour cream and toppings.
  5. Once the mince & rice are cooked stir in the black beans and chopped coriander and heat through.
  6. Serve topped with the sour cream, avocado, chilli, extra coriander and lime.
