Salmon Salad Bowl with Lime & Honey Dressing


Salad bowls are an awesome way to get your extra veggie intake for the day. This delicious one is served with our gorgeous lime & honey dressing.

TIP: You can pan-fry, grill, steam or bake the salmon.

Ingredients

Ingredients

80 grams of fresh salmon fillet
50 grams of baby cos lettuce leaves (4 leaves)
80 grams of carrot, juilenne
1/2 small cucumber, peeled into ribbons
4 grape or cherry tomatoes (50g)
1 long green shallot/scallion, finely sliced
1/2 avocado (80g), sliced
A few fresh mint leaves (optional)
1/2 teaspoon (2.5ml) extra virgin olive oil

Lime & Honey Dressing

3 teaspoons (15ml) fresh lime juice
1 teaspoon (5ml) extra virgin olive oil
1/2 teaspoon (2.5ml) raw honey
Pinch of sea salt

Method

  1. Mix all of the dressing ingredients together in a small bowl.  Set aside and stir occasionally.
  2. Prepare the salad ingredients and place into a serving bowl.
  3. Heat a small pan to a medium heat with 1/2 tsp extra virgin olive oil.  Cook the salmon for a few minutes each side until cooked to your liking.  Cooking time will depend on the size and shape of your fillet.
  4. Place the salmon on top of the salad & dress with the lime & honey dressing.
