AIP Friendly Guacamole on Sweet Potato Toast


We have made this guacamole AIP friendly but don't think for a minute it doesn't taste great, because it does!!

Sweet potato toast is one of those new trends that is here to stay if you haven't tried it yet give it a go!

Ingredients

1/2 avocado, mashed
1/2 teaspoon of fresh lime juice
1 teaspoon of extra virgin olive or avocado oil
1 good pinch garlic powder
1 long green shallot/scallion, sliced
1 teaspoon of chopped fresh coriander
2 slices of sweet potato around .5 - 1 cm thick (totaling 100g)
1 lime wedge to serve (optional)
extra fresh coriander to serve (optional)

Method

  1. Mix all ingredients for the guacamole together and set aside.
  2. Place the sweet potato slices in your toaster and toast until almost cooked through, you want a little texture still in them.
  3. Serve the toast topped with the guacamole and serve with the extra lime and coriander if using.
