Beef Koftas with Beetroot Tzatziki


Koftas are Middle Eastern meatballs. They are usually full of spices & herbs. We’ve left out the spices in this dish as we do have some diet categories that can’t tolerate them, or need to eliminate them for a short time.

TIP: Fresh coriander can always be swapped for parsley, or just left out and enjoy the mint.

Ingredients

120 grams of grass-fed or organic beef mince
1 small clove of garlic, grated or minced
1/4 cup of finely chopped fresh mint & coriander
1/4 teaspoon of sea salt
1 teaspoon of extra virgin olive oil
1 small beetroot (70g), grated (keep 2 tbsps for tzatziki)
1 long green shallot/scallion, finely sliced
1 or 2 handfuls of green salad leaves
1/4 avocado, sliced

Beetroot Tzatziki

2 tablespoons of unsweetened coconut yoghurt
2 tablespoons of grated beetroot (as above)
1 small clove of garlic, grated or minced
1 teaspoon of fresh lemon juice
Pinch of sea salt

Method

  1. Make the tzatziki but mixing all ingredients in a small bowl. Pop it into the fridge until ready to serve.
  2. Using your hands mix the mince, garlic, herbs & salt.  Shape the mince mixture into around 5 small log or ball shapes.
  3. Heat the oil in a small pan to a medium heat & cook the koftas for 3-4mins on each side, until cooked through.
  4. Serve with the salad leaves, grated beetroot, shallot, avocado & beetroot tzatziki.
