Coconut Tzatziki


If you love tzatziki, this is a great dairy-free option.

TIP: We like to use raw garlic in some of our dressings. If you're not a huge fan of raw garlic, maybe start with about a quarter of clove. Raw garlic has many health benefits, so try and add as much as you can!

Ingredients

2 tablespoons (40ml) unsweetened coconut yoghurt
1 small clove of garlic, grated or minced
Zest of 1 small lemon
1 1/2 teaspoons (7.5ml) fresh lemon juice
2 tablespoons (20g) finely chopped cucumber (seeds removed)
Pinch of sea salt

Method

Make the tzatziki by combining all the ingredients together in a bowl.  Serve immediately or put into the fridge until needed.
