Caesar Dressing - 3 ways


Most people love Caesar Dressing. However, the bottled versions are full of additives, preservatives & other ingredients we don't know how to pronounce.

Please note with our mayonnaise option below we've used a good store-bought mayo (always check your ingredients), however, we also have a homemade mayo recipe in this section.

TIP: Anchovy fillets are a big part of where the Caesar dressing gets its flavour. We've only listed it as optional as it's a 50/50 on who actually likes them! If you're not using them, maybe add some extra mustard, lemon & salt to increase your flavours. Some pepper will work will too.

Ingredients

Greek Yoghurt Caesar

2 tablespoons of full fat greek yoghurt
1 anchovy fillet (optional)
1/2 teaspoon of dijon mustard
1 teaspoon of fresh lemon juice
1 small clove of garlic, grated or minced
2 teaspoons of grated parmesan cheese
Small pinch of sea salt (optional)

Coconut Yoghurt Caesar

2 tablespoons of unsweetened coconut yoghurt
1 anchovy fillet (optional)
1/2 teaspoon of dijon mustard
1 teaspoon of fresh lemon juice
1 small clove of garlic, grated or minced
Small pinch of sea salt

Mayo Caesar

2 tablespoons of mayonnaise
1 anchovy fillet (optional)
1/2 teaspoon of dijon mustard
1 teaspoon of fresh lemon juice
1 small clove of garlic, grated or minced
2 teaspoons of grated parmesan cheese (leave out for dairy free)
Small pinch of sea salt (optional)

Method

  1. To make each dressing, mash the anchovy fillet with a small fork.  Then mix all ingredients together in a small bowl.
  2. Note: If your yoghurt or mayo is quite thick you may end up with a very thick dressing.  If you need to you can add around a teaspoon of water to get a better consistency.
