Apple Blueberry Overnight Oats


This big bowl of oats & fruit will keep you going all morning.

TIP: If you don’t get a chance to make this the night before it can be ready to eat in 2 hours and only takes 5 mins to put together.

Ingredients

1/3 cup of gluten free organic rolled oats
1 tablespoon of chia seeds
1/3 cup of unsweetened almond milk (or any plant milk)
1/3 cup of unsweetened coconut milk (or any plant milk)
1 teaspoon of pure maple syrup
1 small apple, grated just before serving
1/4 cup of fresh blueberries

Method

  1. Combine the oats, chia seeds, almond milk, coconut milk & maple syrup into a bowl or jar.  Stir occasionally for 5 mins so that the chia seeds don’t clump together.  Cover and put in the fridge overnight.
  2. When ready to eat, grate the apple & mix into the oats with the blueberries.
