Lemon Pepper Chicken with Mango Salsa


Such a simple marinade for chicken that only needs 10 minutes teamed up with a gorgeous but equally simple salsa. Definitely dinner taken care of in a hurry.

Hint: Not following the autoimmune protocol? You can give the salsa a little extra kick by adding some chilli.

Ingredients

Mango Salsa

1/2 large fresh mango, diced
1/4 avocado (40g) diced
1/4 small red onion, diced
1/2 small cucumber (50g) diced
2 teaspoons of chopped fresh coriander
1 garlic clove, crushed
1 pinch of sea salt
2 teaspoons of extra virgin olive oil
2 teaspoons of fresh lime juice

Ingredients

125 grams of free range chicken breast
2 teaspoons of fresh lemon juice
1 small garlic clove, crushed
1/4 teaspoon of fresh cracked black pepper

Method

  1. Place chicken in a bowl or snap lock bag.
  2. Combine oil, lemon juice and pepper and add to the chicken, coating well.
  3. While chicken is marinating add all salsa ingredients to a small bowl and mix well to combine.
  4. Heat a non stick pan to medium high (alternatively you can use a bbq) Remove the chicken from the marinade and cook approx. 5-6 minutes each side until completely cooked through.
  5. Serve chicken with the mango salsa. Enjoy!
