Zucchini Fritters with Avocado Salsa


This dish will fill you up, however if you’re feeling a little extra hungry team it with some more protein. i.e. another egg, smoked salmon or bacon.

TIP: Makes 3 small fritters or just one larger one.

Ingredients

1 small zucchini (90-100g), grated & juice squeezed out
1 egg (52g), lightly beaten
1 long green shallot/scallion, finely sliced (1/2 for fritters, 1/2 for salsa)
1 tablespoon (8g) almond meal
1/2 teaspoon (2.5ml) cold pressed coconut oil or extra virgin olive oil
1/4 avocado (40g), diced
4 grape or cherry tomatoes (50g), diced
Drizzle of extra virgin olive oil (1.25ml)
Pinch of sea salt

Method

  1. Lightly beat the egg in a bowl.  Add the drained zucchini, ½ the shallot, almond meal & pinch of salt. 
  2. Heat the ½ tsp oil in a small pan to medium heat.  Once heated, add the zucchini mix and make 3 fritters.  Cook for approx. 3 mins each side.  Making sure the pan isn’t too hot as they may burn easily. Place on a serving plate.
  3. Gently mix the avocado, tomato, ½ spring onion, drizzle of olive oil & pinch of salt together. Pile on top of the fritters.  Enjoy!!
