Sweet Potato Hashbrown with Avo & Bacon


Completely AIP approved fritter recipes are few and far between but this one is exceptionally good!

You can easily leave off the bacon but seriously, why would you want to??

Tip: The more finely you grate the sweet potato the better it will hold together.

Ingredients

1 rasher of bacon with rind and most of the fat removed
80 grams of finely grated sweet potato
1/4 teaspoon of dried garlic powder
sea salt & cracked pepper to taste
1/2 avocado
1/2 teaspoon of fresh lime juice
1/2 teaspoon of extra virgin olive oil
1 pinch each of sea salt and cracked black pepper

Method

  1. Cook the bacon in a non stick pan over medium heat until well done.
  2. Meanwhile mix the grated sweet potato with the onion powder, salt & pepper. Once the bacon is cooked, dice and set aside on paper towel.
  3. Add the sweet potato to the hot pan, pushing the mixture together and flattening to form a patty shape and cook for 4-5 minutes each side until nicely browned. 
  4. While the fritter is cooking, mash the avocado and mix in the lime, oil, salt and pepper.
  5. Serve the fritter topped with the avocado and diced bacon.
