Strawberry Chia Flax Bowl


A great alternative to morning oats if you are following a grain free diet. The sweetness of the coconut, strawberries & yoghurt are a nice change from some of the other heavy protein breakfasts.

TIP: We haven't added a sweetener in this recipe as it falls into our low sugar diet categories. If you need this to be a little sweeter add a teaspoon of maple syrup, or for strict keto followers, a little keto approved sweetener.

Ingredients

1/3 cup (80ml) unsweetened coconut yoghurt
2/3 cup (160ml) unsweetened almond milk (or any plant-based milk)
2 tablespoons + 2 teaspoons (28g) chia seeds
1 tablespoon (10g) flaxseeds or flaxseed meal
1 tablespoon (5g) desiccated or shredded coconut
1/2 teaspoon (2.5ml) pure vanilla extract
3 strawberries (60g), diced
Optional toppings: strawberries & coconut

Method

  1. Place yoghurt and milk into a jar or bowl & mix well. 
  2. Add the chia seeds and stir until combined.
  3. Add all the other ingredients one at a time until they are all combined & the chia seeds are not clumped together.  Stir occasionally for around 5 mins before you cover & put into the fridge. 
  4. You can eat this as soon as 10mins after making it or pop it in the fridge overnight for a quick breakfast.
