Creamy Lemon Chicken


Chicken with a creamy lemon & garlic sauce is delicious, extremely low carb & will be on your favourites list.

TIP: This dish goes from stovetop to oven. Using a small ovenproof pan ensures you get lots of sauce at the end. See notes below.

Ingredients

150 grams of chicken breast (approx. 1/2 breast)
1 teaspoon (5ml) of cold pressed coconut oil
1 long green shallot / scallion, finely sliced
2 small cloves of garlic, grated or minced
1/2 cup (125ml) unsweetened coconut milk
Zest of 1 small lemon
2 teaspoons (10ml) fresh lemon juice
1 tablespoon (20ml) water
Few sprigs of lemon thyme (optional)
Pinch of sea salt
1 small zucchini (100g), peeled into ribbons
1/2 teaspoon (2.5ml) cold pressed coconut oil

Method

  1. Heat your oven to 180°C/350°F/Gas 4 & heat a small frypan to a medium heat.  Add the oil to pan & once heated add the chicken.  Brown the chicken for a few minutes on each side. 
  2. The next lot of ingredients are added to the pan around the outside of the chicken, not on top.  Add the shallot to the pan & cook for a minute, then add garlic and cook briefly for around 30 seconds.  Add the coconut milk, lemon zest, lemon juice, water & salt.  Stir to mix.  Add the sprigs of lemon thyme (optional), then pop the whole pan into the oven.
  3. Cook for around 15-20 mins until cooked through.  Cooking time will depend on how thick your chicken piece is.   You can add more coconut milk to the pan if the liquid starts to evaporate too quickly.
  4. Just prior to the chicken finishing cooking, cook your zucchini ribbons by quickly pan frying with some of the extra coconut oil.  Or if preferred steam them.


NOTE:  If you don’t have a small pan you may need to transfer the chicken & sauce into a small oven proof dish.  If your pan is too big the sauce will spread too far and evaporate before the chicken is cooked.
