Yoghurt, Lemon & Mint Dressing


All the flavour you need for a gorgeous salad dressing or dipping sauce.

TIP: Paleo, Vegan & Dairy Free swap out Greek yoghurt for a good quality plain coconut yoghurt.

Ingredients

2 tablespoons of greek yoghurt or unsweetened coconut yoghurt
1 small clove of garlic, sliced
Zest of one small lemon
1 1/2 teaspoons of fresh lemon juice
1/4 cup of fresh mint leaves
Pinch of sea salt

Method

Blizt all ingredients together using a small blender (see notes below).    If your yoghurt is thick you may need to add a couple of teaspoons of water until you get a more fluid dressing consistency.

*Note if you don’t have a small blender you can use a mortar & pestle or just mince and chop your ingredients finely and mix together for the dressing.
