1 small fresh beetroot (60g), grated (keep aside 2 tsps for the tzatziki)
1 small carrot, grated (can leave out if you have a bigger beetroot)
1/3 cup of canned mixed beans, rinsed & drained well
1 long green shallot / scallion, finely sliced
1/4 cup of fresh corriander
1 teaspoon of tahini
1/2 teaspoon of ground cumin
1/8 teaspoon of sea salt
1 teaspoon of fresh lemon juice
1 tablespoon of quinoa flakes (plus 1 tbsp extra for rolling)
1/2 teaspoon of extra virgin olive oil
1/2 small cucumber, peeled into ribbons
1 or 2 handfuls of green salad leaves
Lemon to squeeze over top
2 tablespoons of plain coconut yoghurt (or greek yoghurt)
2 teaspoons of grated beetroot (see above)
1 teaspoon of fresh lemon juice
1 small clove of garlic, grated or minced
Pinch of sea salt
