Beetroot & Bean Patties with Beetroot Tzatziki


These are such a delicious burger pattie. We decided to go with a fresh side salad, however team it with your favourite gluten free or wheat free wrap or bun for a gorgeous burger. A must try with our ‘next level’ beetroot tzatziki.

TIP: Coriander can always be swapped out for another herb, or left out entirely. Parsley or mint are a nice option here. Also, the canned bean mix can be any other bean type, especially if you already have leftovers.

1 small fresh beetroot (60g), grated (keep aside 2 tsps for the tzatziki)
1 small carrot, grated (can leave out if you have a bigger beetroot)
1/3 cup of canned mixed beans, rinsed & drained well
1 long green shallot / scallion, finely sliced
1/4 cup of fresh corriander
1 teaspoon of tahini
1/2 teaspoon of ground cumin
1/8 teaspoon of sea salt
1 teaspoon of fresh lemon juice
1 tablespoon of quinoa flakes (plus 1 tbsp extra for rolling)
1/2 teaspoon of extra virgin olive oil
1/2 small cucumber, peeled into ribbons
1 or 2 handfuls of green salad leaves
Lemon to squeeze over top

Beetroot Tzatziki

2 tablespoons of plain coconut yoghurt (or greek yoghurt)
2 teaspoons of grated beetroot (see above)
1 teaspoon of fresh lemon juice
1 small clove of garlic, grated or minced
Pinch of sea salt

Method

  1. In a small blender add the beans, shallot, coriander, tahini, lemon juice, cumin & salt.  Blend well by pulsing and mixing together. 
  2. Put into a bowl, add the grated beetroot, carrot (if using), & quinoa flakes.  Mix well, then using your hands form the mix into 2 or 3 patties.
  3. Heat the oil in a small pan to medium heat & cook the patties for 3-4 mins on each side.
  4. Serve with the salad & cucumber, tzatziki & a squeeze of lemon.
