Sweet Potato Breakfast Toast


Swapping out the toast for sweet potato slices is such a great idea and the fact you can actually cook it in the toaster means it's quick and super easy too! We took the avocado one step further by making it into guacamole but it's still yummy with just smashed avo.

Hint: Don't like chilli? Swap it out with some diced tomato.

1 slice of sweet potato around .5 - 1 cm thick (totaling 60g)
1 free range egg

Smashed Avo

1/2 avocado, mashed
1/8 small red onion. diced
1/4 red chilli, diced (reserve a couple of slices to garnish)
1/4 teaspoon of dried garlic powder
1/2 teaspoon of fresh lime juice
1/2 teaspoon of extra virgin olive oil
2 teaspoons of roughly chopped fresh coriander plus extra to garnish (optional)
Himalayan or sea salt & cracked black pepper to taste

Method

  1. Make the guacamole by combining all of the ingredients in a small bowl then set aside.
  2. Place the sweet potato in your toaster. The setting will depend entirely upon your toaster, we used the highest setting and cooked it twice, just keep an eye on it, it will start to blister and brown a little.
  3. While the sweet potato is cooking fry or poach the egg to your liking.
  4. Serve the sweet potato slice topped with the guacamole and the egg and garnish with extra coriander and chilli if using.
