Coconut Chicken Rice Paper Rolls


Rice paper rolls are a great healthy dinner. We love serving ours with a punchy spicy dipping sauce and this one is fabulous.

Tip: If you don't have time to poach the chicken, any cooked chicken will work for these rolls.

Ingredients

100 grams of chicken breast (whole piece)
1/2 cup of unsweetened coconut milk
1/2 cup of water or chicken stock
20 grams of vermicelli noodles (or similar)
1 small carrot, julienne
1 small cucumber, sliced into thin batons
1 long green shallot / scallion, sliced into long strips
6 mint leaves (or more)
3 rice paper wraps

Dipping Sauce:

1 tablespoon of fresh lime juice
1 teaspoon of fish sauce
1/4 teaspoon of coconut sugar
1/2 or 1 full bird's eye chilli, finely sliced

Method

  1. Place the chicken in a small saucepan and add the coconut milk & water.  Make sure the chicken is covered in liquid.  If your saucepan is bigger you will need to add more liquids.  Bring to a gentle simmer, cover & reduce heat to low simmering for 5 mins. 
  2. Take the saucepan off the heat and set aside for 5 mins with the lid still on. 
  3. Take the chicken out and rest & cool a little.
  4. In the meantime, cook the noodles as per the instructions.  Each type of noodle can be different.  Drain them well.
  5. Prepare all salad ingredients. 
  6. Mix the dipping sauce ingredients together in a small bowl.  Continue to stir occasionally until ready to serve.
  7. When the chicken is cool enough, pull it into shreds using your fingers.
  8. Place a rice paper wrap on a plate.   Wet your hands with warm water & smooth over the entire round.  Flip it over and do the same on the other side. 
  9. Place a portion of your salad, noodles & mint into the middle of the wrapper, fold up the wrapper end, and then the sides, and roll up to complete. 
  10. Dip into the sauce.  Or for a big flavour boost add some sauce into the wrap before rolling.  Enjoy!
