Grilled Steak Gyro with Tzatziki Sauce


All the flavours of Greece! A Gyro (pronounced Yee-roh) is basically seasoned meat served with yoghurt and salad on a pita bread. We've taken the traditional recipe and tweaked it a little so it's gluten, grain and dairy free! So good!

Ingredients

Flatbread

2 tablespoons of arrowroot or tapioca flour
2 tablespoons of blanched almond meal
1 tablespoon of unsweetened coconut yoghurt
1 tbsp + 1 tsp water
1 pinch of sea salt
1/4 teaspoon of cold pressed coconut oil

Ingredients

125 grams of beef fillet steak
1/8 teaspoon of dried oregano
1/8 teaspoon of dried mint
1/8 teaspoon of ground paprika
1 teaspoon of extra virgin olive oil
1/2 cup of shredded lettuce 10g
2 cherry tomatoes (35g) cut in quarters
10 grams of sliced red onion or 1x long green shallot/scallion

Tzatziki Sauce

1 tbsp + 2 tsp unsweetened coconut yoghurt
1/4 small cucumber (25g) diced
1 teaspoon of fresh lemon juice
1/8 teaspoon of dried dill
1/8 teaspoon of dried garlic powder
small pinch sea salt

Method

  1. Combine all of the Tzatziki ingredients in a small bowl and place in the fridge.
  2. Coat the steak in the olive oil and rub in the combined herbs and spices and set aside and prep the salad ingredients.
  3. Make the flatbread by mixing almond meal, arrowroot or tapioca flour, yoghurt, water and salt in a small bowl until it becomes a well combined smooth batter.
  4. Heat oil in a medium sized fry pan over a medium heat. Pour mixture in and swirl the pan slightly to create an even thickness and tortilla measures around 15-16 cm across.
  5. Cook on high for 2-3 minutes or until golden brown and firm enough to flip. Turn and cook further 2-3 minutes or until nicely browned. Set aside on a serving plate.
  6. Raise the heat of the pan to high and cook the steak for 4-6 minutes each side or until done to your liking. Let rest for a few minutes.
  7. Slice the steak and assemble gyro as per picture. Fold and serve.
