Orange, Pomegranate & Walnut Salad


This salad is fresh & sweet with a gorgeous orange vinaigrette. Pomegranate seeds are little red jewels that add an amazing pop to so many dishes. Plus they are loaded with vitamins and have many health benefits.

TIP: The mint leaves are optional, but adding a herb adds another delicious & healthy element to this salad.

Ingredients

Ingredients

1 orange, 1/2 sliced & 1/2 juiced for the dressing
Seeds of 1/2 pomegranate (see notes)
2 large handfuls of mixed salad greens
1/4 cup of walnuts, toasted or raw
1/4 cup of fresh mint leaves

Orange Vinaigrette

2 tablespoons of orange juice (40ml)
1/2 teaspoon of apple cider vinegar
1/2 teaspoon of dijon mustard
1/2 teaspoon of raw honey or maple syrup
Pinch of sea salt

Method

  1. Prepare all the salad ingredients and place into a bowl. 
  2. Gently toast the walnuts, or alternatively leave them natural.
  3. Make the vinaigrette by whisking or shaking your dressing ingredients together.
  4. Top the salad with walnuts and dressing.  Enjoy!

 

Note: Pomegranate is seasonal to the warmer months.  The easiest way to remove the seeds is to gently roll the fruit first to loosen the seeds.  Cut around middle through the skin only and pull in half.  Over a bowl, hold the half pomegranate upside down in your hand.  Then using a wooden or metal spoon hit the outside of the pomegranate until the seeds fall out into your hand or through your fingers into the bowl.
