Chia Pudding with Strawberries & Banana


Simple chia pudding breakfast.

TIP: Coconut milk can be replaced by all almond milk or even coconut water.

Ingredients

3 tablespoons of chia seeds
1/2 cup of unsweetened coconut milk
1/2 cup of unsweetened almond milk
2 teaspoons of pure maple syrup
1/4 teaspoon of vanilla extract (optional)
3 strawberries
1/2 small banana

Method

  1. Mix the coconut milk, almond milk, maple syrup & vanilla together in a bowl or glass.  Stir in the chia seeds and continue to stir for about a minute to make sure the seeds aren’t clumping together.  
  2. Continue to stir occasionally for 5 mins, then cover and put in the fridge overnight.
  3. Serve with fresh strawberries and banana.
