Chickpea & Brown Rice Salad Bowl


We love a good salad bowl. This one has dry roasted chickpeas with a sprinkle of flavour & is then finished off with our gorgeous coconut yoghurt, lime and mint dressing. Delicious!

TIP: You can use coconut milk instead of yoghurt and if you don’t like mint, basil or coriander are fabulous substitutes>

1/4 cup of brown rice, cooked as per instructions
1/3 cup of tinned chickpeas, rinsed & dried well
1 large handful of salad greens
1 small cucumber, peeled into ribbons
1 small carrot, julienne
1 long green shallot / scallion, sliced lengthways
1/4 avocado, sliced or diced
Pinch of garam masala spice
Pinch of sea salt

Dressing

2 tablespoons of unsweetened coconut yoghurt
Zest of 1 lime
1 1/2 teaspoons of fresh lime juice
1 small clove of garlic, sliced
1/4 cup of fresh mint leaves
Pinch of sea salt

Method

  1. Cook the rice as per instructions and set aside to cool a little.
  2. In the meantime: make the dressing by putting all dressing ingredients into a *small blender & blitzing until well combined.  We use Coyo coconut yoghurt which is quite thick and add 1 tbsp of water to get a more fluid consistency.
  3. Prepare the salad ingredients and place them into a serving bowl.
  4. Heat a small pan to a low-medium heat.  If you have a good pan you won’t need any oil and can dry fry your chickpeas.  If you need to just add a small coating of coconut oil to the pan to stop them from sticking and cooking too quickly.  Cook for approx. 10mins.  Add a pinch of sea salt & pinch of garam masala.
  5. Add the brown rice and chickpeas to your serving bowl.  Top with dressing and enjoy!
*Note if you don’t have a small blender you can use a mortar & pestle or just mince and chop your ingredients finely and mix together for the dressing.
