Sweet Potato, Apple & Walnut Salad


This salad embraces fruit and sweetness with a tangy kick, depending on how sour or sweet your lime is.

TIP: We had a small sweet potato for this dish, however, if you only have a bigger sweet potato you could choose prepare and cook the entire potato and plan it into another dish over the next few days.

Ingredients

200 grams of sweet potato, cut into 3cm cubes
1 teaspoon of cold pressed coconut oil
1 small apple (100g), sliced just before serving
1/4 cup of walnuts, toasted
2 large cups of mixed salad leaves

Dressing

1 tablespoon of (20ml) fresh lime juice
1 teaspoon of extra virgin olive oil
1/2 teaspoon of raw honey or maple syrup
Pinch of sea salt or pink Himalayan salt

Method

  1. Heat your oven to 180°C / 350°F / Gas 4.   Rub the coconut oil into the sweet potato cubes, place on a lined baking tray and bake for approx. 20-30mins until tender.
  2. Just before the sweet potato is ready, toast your walnuts in a small pan on low heat.  They will only need a minute or 2, stir occasionally and make sure you keep an eye on them so they don’t burn.
  3. Whisk or shake your dressing ingredients together and set aside.
  4. Once the sweet potato is cooked, place the salad leaves in a bowl, top with sliced apple, sweet potato and walnuts.  Add the dressing, and possibly a little extra sea salt & a twist of fresh pepper if needed.
