Salmon Quiche


Using fresh baked salmon is what makes this dish stand apart from your regular quiche recipes.
It's an all in one dish too, so super easy!

Tip: Dill and salmon work very well together but you can use any fresh or dried herbs you like.

Ingredients

1/4 teaspoon of cold pressed coconut oil, melted
100 grams of fresh salmon, skin off
2 free range eggs
2 teaspoons of unsweetened coconut yoghurt
1/2 long green chilli, sliced
1/4 small capsicum, diced
1/2 small long green shallot/scallion, sliced
1 teaspoon of fresh dill or 1/4 tsp. dried
sea salt & cracked pepper to taste

Method

  1. Pre-heat oven to 180 °C - 350 °F - Gas mark 4.
  2. Grease a small 1.5 cup baking dish with the coconut oil, pat salmon dry with paper towel and add to the dish. 
  3. Bake in the oven for 4 minutes only then remove, cool a little and break into chunks, leaving it in the dish.
  4. Meanwhile whisk the eggs with the remaining ingredients. When salmon has cooled a little pour the eggs into the dish. Cook a further 15 minutes or until egg is set.
