Rocket and Pear Salad


This is one of those salads you will make again and again. It's one of our favourites, it's super easy and it tastes amazing!

Tip: You could easily swap the pear for sliced apple.

Hint: Just use as much of the dressing as you like, it will keep for weeks and any excess can be used on any other salad.

Ingredients

Ingredients

75 grams of rocket leaves
1/2 small pear, cored and sliced (50g)
20 grams of toasted walnuts

Dressing

1/4 teaspoon of Dijon mustard
1 1/2 teaspoons of balsamic vinegar
1 tablespoon of extra virgin olive oil
sea salt & cracked pepper to taste

Method

  1. Place all dressing ingredients in a screw top jar and shake until well mixed.
  2. Place salad ingredients into a bowl or on a platter and toss gently

Note: To toast walnuts just place in a dry pan over medium heat for a few minutes to release the natural oils
