Crispy Skin Balsamic Chicken Drumsticks


Anything with balsamic gets a tick in our books and these chicken drumsticks have a gorgeous crispy skin, tangy balsamic and sweet tomatoes. It all just works!

Tip: Be sure not to skip the step to rinse and dry the chicken, it will ensure a crispier skin.

Ingredients

2 free range chicken drumsticks, skin on
6 cherry tomatoes, halved
1 tablespoon of extra virgin olive oil
1 tablespoon of balsamic vinegar
1 teaspoon of ground paprika
1 teaspoon of dried oregano or mixed herbs
1/4 teaspoon of sea salt
1 pinch of fresh cracked black pepper

Method

  1. Heat oven to 180°C. Rinse and pat dry chicken legs, place in a greased baking dish and surround with tomatoes.
  2. Combine oil, vinegar, paprika and herbs, drizzle over the chicken and season with salt and pepper.
  3. Cover the dish with foil and bake for 20 minutes. Uncover and bake 15 minutes more, ensuring chicken is cooked all the way through and skin is crispy.
