Prawn and Strawberry Salad


An unusual combination that works beautifully.
We should all be having 1-2 servings of seafood a week and this is a great way to do it.

Ingredients

Ingredients

125 grams of cooked and peeled prawns
3 medium strawberries, quartered
2 cups of mixed salad greens
25 grams of crumbled goats feta
1/4 small cucumber, sliced
1/2 small long green shallot/scallion

Dressing

1 tablespoon of extra virgin olive oil
1/2 teaspoon of balsamic vinegar
1/2 teaspoon of water
1 pinch each of sea salt and cracked black pepper

Method

  1. Mix all ingredients in a serving bowl
  2. Combine all dressing ingredients in a small screw top jar and shake until well combined
  3. Pour dressing over salad and gently toss to coat.
