Prawns in a Sun Dried Tomato Sauce


So very light and fresh, the sauce is like a buttery broth and it's so delicious!

Hint: This fit's perfectly into the keto diet and is really nice served with some cauliflower rice.

Ingredients

1 tablespoon of cold pressed coconut oil
8 medium green prawns, shelled and de-veined
1 garlic clove, crushed
1/2 cup of chicken broth or stock
1 1/2 teaspoons of fresh lemon juice
20 grams of soft sun-dried tomatoes
1 large pinch ground paprika
1 tablespoon of butter
1 small of pak choy or bok choy
1 cup of baby spinach leaves

Method

  1. Heat coconut oil in a pan to hedium high, add prawns and garlic and cook until prawns are almost done, approx. 2-3 mins. Remove from pan and set aside.
  2. Add broth, lemon juice, tomatoes and paprika to pan, reduce liquid by 1/3 then stir in the butter.
  3. Add pak choy and cook 2 minutes, add the spinach and the pre cooked prawns back to the pan.
  4. Continue cooking for 1 more minute. Serve and enjoy!
