Paleo Cherry Ripe Pancakes


You had us at Cherry Ripe! Seriously though, chocolate and cherries? Yes please!

Note: The toppings are just a serving suggestion and are optional.

Tip: These pancakes can stick a little so make sure you have a good quality non-stick pan and grease it well

Ingredients

1 free range egg
1 tablespoon of plus 2 tsp. water
1/2 teaspoon of vanilla extract
2 teaspoons of pure maple syrup
1/4 cup of blanched almond meal
1/2 teaspoon of gluten free baking powder
1 1/2 teaspoons of coconut flour
1 tablespoon of pure cacao powder
1 small pinch sea salt
6 cherries, roughly chopped and mashed a little
3 teaspoons of desiccated coconut
unsweetened coconut yoghurt, toasted coconut flakes, cacao nibs and extra cherries to serve (optional)

Method

  1. Whisk egg in a small bowl until frothy, then mix in coconut milk, water, vanilla and honey
  2. Place almond meal in a second small bowl and sift in the baking powder, coconut flour, cacao and salt. 
  3. Stir the wet mixture into the dry ingredients and whisk until well incorporated then gently stir in cherries and coconut. Let sit for a couple of minutes to let coconut flour absorb and add a little more water if mixture is too thick.
  4. Heat a non-stick pan to medium low heat and grease well with coconut oil. 
  5. Pour half of the mixture into the pan. Cook for approximately 3-4 minutes or until the top starts to dry out a little, most of the bubbles have popped and they are browned on the bottom. Flip carefully and continue cooking for a further 2-3 minutes or until cooked through then remove to a plate. 
  6. Repeat with the remaining mixture. You can serve with a dollop of coconut cream or yoghurt and top with extra cherries, coconut flakes or cacao nibs.
Note: Coconut flour varies greatly between brands so make sure mixture is able to be poured into pan but not too runny as you don’t want it to spread too much. You should get 2 pancakes approximately 12cm each.
