Nori Breakfast Roll


A breakfast twist on sushi! Lots of amazing good fats and nutrients in this dish, the perfect start to your day.
This is one of those recipes that is extremely versatile, you can use whatever fillings you like.

1 seaweed nori sheet
1 teaspoon of cold pressed coconut oil
1 free range egg
1 pinch of mixed herbs
1/4 avocado, sliced
1/4 small cucumber (25g) sliced
1/2 cup of mixed salad greens of choice
3 cherry tomatoes, sliced

Dressing

1 tablespoon of unsweetened coconut yoghurt
1/2 teaspoon of ground turmeric
1 teaspoon of fresh chopped chives

Method

  1. Lay Nori sheet down on a chopping board shiny side up.
  2. Add coconut oil to a small frypan over medium heat (keep nori sheet size in mind)
  3. Add egg mixture to pan. When top has almost set flip over and continue cooking until done. Approx. 1 minute each side
  4. Flip omelette onto nori sheet and starting at bottom edge, lay avocado slices overlapping all the way to the edges. Repeat with cucumber, then greens, working your way almost to the top, leaving some excess for rolling. Spoon dressing over the greens.
  5. Carefully roll from bottom edge, tucking everything in as you go ensuring excess nori is on the bottom to secure the roll.
  6. Slice in half and serve.
