Strawberry & Haloumi Salad with Balsamic Dressing


The flavours in this dish just work so incredibly well together, we dare you not to love it.

Don't leave out the fresh mint, it really does bring it all together, so fresh and summery.

60 grams of sliced haloumi
50 grams of mixed green salad leaves
5 medium strawberries (50g) quartered
1/4 cup of mint leaves, sliced thinly

Balsamic Dressing

2 teaspoons of extra virgin olive oil
3/4 teaspoon of balsamic vinegar
1/4 teaspoon of Dijon mustard
sea salt & cracked pepper to taste

Method

  1. Heat a small non-stick pan to medium and cook slices of haloumi on both sides until nicely browned, around 4-5 minutes. Set aside to cool.
  2. Add salad leaves to a serving bowl and mix in strawberries and mint.
  3. Place all dressing ingredients in a small jar and shake or whisk in a small bowl until well combined.
  4. Once haloumi is cooled, cut into bite sized pieces and add to the salad.
  5. Pour over the dressing and gently toss. Enjoy!
