Clean Keto Nourish Bowl

Ingredients

1/2 teaspoon of cold pressed coconut oil
3 cherry tomatoes, halved
1 free range egg
15 grams of crumbled goats feta
1/2 cup of baby spinach leaves (10g)
sea salt & cracked pepper to taste
50 grams of alfalfa sprouts
2 baby cos lettuce leaves, shredded
1/4 avocado, sliced (40g)
1/4 cup of kimchi

Method

  1. Whisk the egg in a small bowl and add in crumbled goats feta and spinach
  2. Heat butter in a pan over medium heat and add tomatoes, cook until just starting to collapse, 2-3 minutes.
  3. Meanwhile place other ingredients into a serving bowl. Once tomatoes are cooked, add to the bowl also.
  4. Pour egg mixture into pan and scramble until cooked through. Season with salt and pepper and add to your bowl.
  5. Enjoy
