Sri Lankan Prawn Curry


A gorgeous curry that's ready in 20 minutes! It's Keto and fits in with most other dietary protocols.

Tip: Use whatever vegetables you like or whatever you have on hand and pretty much any protein would work with this.

Ingredients

1 tablespoon of cold pressed coconut oil
1/4 small onion, sliced
50 grams of cauliflower florets
1/2 long red chilli, sliced plus extra to garnish
1 garlic clove, crushed
2 stalks broccolini, halved (30g)
1/2 small zucchini, halved & sliced (60g)
1 teaspoon of curry powder or more if you like a hotter curry
1/4 teaspoon of ground ginger
1/4 teaspoon of ground cumin
1/2 cup of full fat coconut milk
125 grams of peeled and deveined prawns

Method

  1. Heat oil in a pan to medium high. Add the onion, chilli, broccolini and zucchini and cook for 4 minutes, add garlic and cook one minute more.
  2. Add the curry, ginger and cumin and cook 30 seconds then add the coconut milk and reduce heat to a simmer.
  3. Add the prawns and simmer for around 5 minutes or until just cooked through. Season to taste.
