Sweet Chicken & Mango Nourish Bowl


An Asian inspired sticky chicken breast surrounded by delicious ingredients to compliment.

100 grams of free range chicken thigh, sliced
1 teaspoon of apple cider vinegar
1 teaspoon of pure honey
1 teaspoon of coconut aminos or wheat free tamari
1 teaspoon of lime juice
2 large or 3 smaller cos lettuce leaves
1/2 fresh mango
1/2 small cucumber, sliced
3 cherry tomatoes, halved
1/2 cup of alfalfa sprouts (10g)
1 small radish, sliced
1/2 long green shallot/scallion, sliced
1/2 long red chilli, sliced

Honey Sesame Pumpkin Seeds

1 tablespoon of pepitas/pumpkin seeds
1/4 teaspoon of pure honey
1/4 teaspoon of coconut aminos or wheat free tamari
1/4 teaspoon of sesame seeds

Method

  1. Place the chicken breast in a snap-lock bag or bowl. Mix vinegar, honey, aminos and lime juice and add to the chicken, coating well. Allow to marinate for 15 minutes to 1 hour.
  2. Meanwhile heat a small pan to medium low and add all seed mix ingredients. Cook stirring for 2-3 minutes or until it caramelises, keeping an eye on it to avoid burning. Set aside to cool.
  3. Once chicken is marinated, heat a pan to medium and grease well with coconut oil. Cook chicken on both sides until lightly browned and cooked through.
  4. Arrange the salad ingredients in your bowl however you would like, top with the cooked chicken then garnish with seed mix, shallots and chilli.
  5. Enjoy!
